Criollo
Criollo is a high-end cocoa variety primarily cultivated in Latin America. It is known for its rarity and fine and delicate flavor, described as fruity, floral, and spicy.
Forastero
With a more bitter and less complex taste than Criollo, Forastero stands out for its robustness. This variety is the most common, representing about 80% of the world's cocoa production. It is mainly cultivated in West Africa, Central Africa, and Southeast Asia.
Trinitario
A natural hybrid between Criollo and Forastero, Trinitario balances the robustness of the cocoa tree and the beans' taste.
